Our mission is to change the food system that affects all of us. We believe that food is political, that the choices we make about food -- what we choose to eat and whom we choose to support by doing so -- resonate through our community, economy, and planet. At the foundation of this project is a commitment to invigorating our community, discovering the plenitude of our local foodshed, supporting sustainable agricultural practices, and working cooperatively.
We source organic food first and go local whenever possible. It’s our mission to advocate for and support our local small-scale organic farmers and producers -- those tenacious, hard-working and innovative folks at the heart of our local food system. The bulk of our food sourcing happens through On The Move Organics (you can order from them too! Check out onthemoveorganics.ca). We’ll keep this list updated with our farmer and producer partners.
Chef Allemeier has received several honors such as the Silver Medal at the Quebec Culinary Show and a Bronze medal at the Montreal Culinary show. He is a true epicurean and loves to treat his friends to his new creations to get their feedback before introducing them on the hotel menus. His culinary philosophy and passion reflect the current trend towards a healthier and naturally nutritional diet. Working with neighboring farmers to seek out the finest in regional and local organic produce, is the essence of his cuisine.
Chef Marte's deep appreciation for continental cuisine was developed at a young age growing up in Madrid, Spain where she was exposed to a variety of foods that would fuel her life long passion for cooking. She began her culinary career at the age of 16 working in the shuck room at the well known beachfront restaurant "Snack Jack's" in Flagler Beach. At age 18 Maria moved to Tallahassee and trained under acclaimed chef Rick Rothwell at the prestigious University Center Alumni Club, working and studying the nuances of both French and Classic American cuisine.
With 28 years of professional cooking Chef Mina posseses the passion, world experience, and culinary expertise to provide impeccable service and 5 star culinary creations to satisfy your every food and taste desire. While proficient in a variety of cuisines and modern cooking techniques he also has the sensitivity to create custom menus in accordance with your lifestyle and eating habits, while meeting all your dietary considerations.
